Chocolate, chocolate, and more chocolate!!!

When Andrew's mom was in high school she took a baking class and they learned how to dip chocolates, so she went home and showed her family and it started a tradition that every Christmas they dipped chocolates to give to the family, friends, and neighbors.

So when Andrew and I got married we decided we wanted to take on the tradition and learn how to dip chocolates! This is our 2nd year dipping and its so much fun but also a lot of hard work!
This is what the fondant looks like when its almost to its boiling point.

After the fondant has come to its boiling point,
you lay it out on the marble until its cooled.
After its cooled you stir it, than add the flavoring, than stir more. This is the hardest part in my opinion, because it takes like an hour or more til it sets up and becomes the center and your arms get so tired, we usually rotate between the 3 of us.

There is 2 kinds of chocolates that you cool differently. Snickers and Caramels,after they come to there boiling point you put it in a square pan, you also don't have to stir, after they have cooled you cut them in squares.

This year we tried Cherry Cordials for the first time. They were tricky because you couldn't roll them out ahead of time because the reaction with the cherries and fondant. Within 10-15 minutes of rolling them the fondant would start to turn to liquid so one person rolled while the other dipped.

The last thing we do before putting them on the trays is putting them in paper cups.
This is always my job because i'm not very good at dipping yet.
